My Favorite and Most Decadent Healthy Dessert

Moo-Less Chocolate Pie

Prep time: 2 hours, 10 minutes

 

2 cups Tropical Source semi sweet chocolate chips  

1/3 cup coffee liqueur

1 block of silken tofu

1 tsp. vanilla extract

1 Tbls. Honey

1 prepared pie crust

 

Melt chocolate chips and coffee liqueur. Stir in vanilla.

 

Combine the tofu and honey in a blender or food processor. Liquefy and blend smooth. Add in the chocolate mixture and blend until smooth.

 

Pour into crust and refrigerate for 2 hours, or until the filling is set. Yields 8 servings.

 

(I have frozen leftovers and it freezes well.)

 

Variation: Use Raspberry or Sugar-free Raspberry coffee syrup in place of the coffee liqueur. Serve with raspberry sauce.
